  • 2 tablespoons fresh parsley, chopped

For the dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano

Instructions

Step 1: Cook the orzo

Bring a pot of salted water (or broth) to a boil. Add the orzo and cook according to package instructions (about 8–10 minutes) until tender. Drain and set aside to cool slightly.

Step 2: Prepare the shrimp

Step 3: Prepare the vegetables

In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

Step 4: Make the dressing

In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.

Step 5: Combine everything

Add the cooked orzo and shrimp to the bowl with the vegetables. Pour the dressing over everything and gently toss until well combined.
