Beef and Guinness Stew: A Hearty Irish Classic

For a rich, comforting meal, Beef and Guinness Stew is a top choice. This Irish dish is packed with tender beef, root vegetables, and a deep, malty flavor from the Guinness beer.

Why Use Guinness?

The dark stout beer enhances the flavor of the beef, adding a slight bitterness that balances well with the sweetness of the carrots and onions.

Ingredients:

• Beef chuck (cubed)
• Onions, carrots, and potatoes
• Garlic and thyme
• Tomato paste
• Guinness stout
• Beef broth
• Flour (for thickening)

Steps to Prepare:

1. Brown the beef in a large pot. Remove and set aside.
2. Sauté onions and garlic, then stir in tomato paste.
3. Add Guinness, scraping the pan to deglaze.
4. Return beef to the pot and add broth, thyme, and vegetables.
5. Simmer for 2–3 hours until the meat is tender.
6. Serve hot with mashed potatoes or crusty bread.

Beef and Guinness Stew is a staple for St. Patrick’s Day, but it’s also a great cold-weather comfort food.
